Easy Fluffy Pancakes with Raspberries & Blueberries

Makes 8 small or 4 large pancakes.


Ingredients

  • 135g plain flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 2 tbsp caster sugar

  • 130ml milk

  • 1 large egg, lightly beaten

  • 1 tsp icing sugar

  • hand full of raspberries and blueberries

Instructions

  1. Mix all ingredients together (wet & dry) until you have a smooth mixture.

  2. Lightly spray frying pan with oil or butter and fry on both side 🥞

  3. Plate the pancakes and then add berries & sprinkle icing sugar to serve
