Classic Rice & Beans - Easy Recipe | Plant-based

So comforting, this is my favourite go-to dish that is tasty and nourishing!


Ingredients

(serves 2-3)

  • 380 g carton of cooked red kidney beans

  • 1 onion finely chopped

  • 2 cloves of garlic finely chopped

  • 1 tsp of smoked paprika

  • 1/2 tsp of chilli flakes

  • 1 tsp of dried thyme

  • 2 tsp of salt

  • Salt and black pepper

  • Olive oil

  • Cooked rice

Additional toppings

  • 1 Avocado

  • Cubed red sweet pepper

  • Fresh parsley

  • Sesame seed


Instructions

  1. Over medium heat, add olive oil and sautee onions and garlic until the onion is translucent

  2. Add kidney beans along with the water it comes in. If there is no water add 50ml of water to the pan and bring to a boil

  3. Season with paprika, thyme, chilli flakes, salt, pepper and stir

  4. Cook for 5mins or until the seasoning is fully infused.

To serve

  • Place rice and beans in a bowl/plate and add toppings listed above or your preferred toppings
