This is a quick healthy breakfast combination that is both plant-based and tasty. Stuffed with avocado, you can get as creative as you like with the toppings. In my case, I went with the 'more is more' mantra.
Ingredients
1 whole sweet potato
1 small avocado
1 avocado
2-3 asparagus
1 strip of vegan bacon
Fresh parsley
A pinch of sea salt
Olive oil
A dressing/sauce of your choice
Instructions
Preheat the oven to 400ºF/200ºC/Gas Mark 6
Wash the sweet potato and use a fork to poke 1inch holes into it, all over
Place in the oven and bake for 25mins or until it's fully cooked
Cook the asparagus in a pot of water for 3-5mins
Pan-fry the vegan bacon evenly on both side and then chop into small pieces
Smash the avocado in a bowl and add a pinch of salt
Once the sweet potato has been cooked, make a slit at the top no deeper than 3/4 of the way down
Then stuff the sweet potato with the avocado, asparagus and vegan bacon
To finish, add chopped parsley and dressing.
