Quick Bruschetta Avocado Toast Recipe | Vegan, Plant-based

It's all about stacking! This is a quick and easy breakfast (or brunch) avocado recipe idea that is absolutely divine and ticks all the breakfast boxes.


Ingredients

  • 1 slice of sourdough bread

  • Roughly 7 cherry tomatoes

  • 2 tsp balsamic vinegar

  • 1 Avocado

  • Fresh parsley

  • Sea salt


Instructions

  1. Start by toasting the bread

  2. In a bowl, add chopped tomatoes, parsley and balsamic and mix together

  3. Spread the tomato mix over the toasted bread

  4. Then thinly slice the avocado and place on top of the tomato mix

  5. To finish, add sea salt and parsley
