A classic, crumpets are a great way to jazz up your morning toast, super light and tasty, this combination is absolutely divine.
Ingredients
2 crumpets
2 eggs
1 avocado
1 tsp of lemon juice
Fresh thyme
Salt
Pepper
Oliver oil
Instructions
Start by toasting the crumpets
In a bowl, smash the avocado and mix in the lemon juice
Spread the avocado mix over the toasted crumpets
Add oil to a fry pan and turn on medium/low heat
In a bowl whisk eggs together
Pour mixture into frying pan and let it sit for a few seconds before gently move to create scrambled eggs
Once eggs have been scrambled, evenly distribute it over crumpets
To finish, add salt, pepper and fresh thyme
